A good couverture is very exciting. The chocolates of Holger In't Veld and Simeon Rückert are opening complex taste levels and intense aromas. Acidity and bitterness are harmoniously but distinctly contrasted and melt on the tongue with a delicate melt. These charismatic and complex couvertures bring out the character of the beans used in each case. This is a unique way among chocolate makers. Taste is allowed to develop, the acidity can be controlled, but one batch is never the same as the next. That is wonderful!
Our pars broken chocolate is presented in a beautiful box and contains 150 g or 300 g with large chocolate pieces of 80% Grand Cru from different regions like Panama, Guatemala or Peru and is refined with herb cocoa nibs or sugared blossoms.
