Florian Sperlhofer, born in 1995, is an Austrian who was most recently Sous Chef at the 3*** Michelin Restaurant Rutz. After many stops along the way (Restaurant Amador*** or Restaurant Reinstoff**), he was responsible for the patisserie at Restaurant Tim Raue** and for the entremetier at Bootshaus Traunkirchen.

Now Florian is finally cooking his own cuisine, in the spirit of pars, with a focus on local sourcing and the full utilization of every part of the product. His dishes perform a delicate dance between flavors and textures, offering something that can be both bright and fast-paced, yet profound and moving. We at pars embrace all of this and look forward to sharing the experience with you.
