Fruity – lively – indulgent
In just the past four decades, reckless exploitation of nature has destroyed 85% of Cambodia’s rainforests. Yet there are places of hope. In the Sindora Garden in Kampot, sisters Keo and Malika practice regenerative agriculture, transforming barren land into fertile soil. Instead of promoting monocultures, pepper is cultivated among hundreds of other plant species – a natural, environmentally friendly method that protects ecosystems and preserves biodiversity.
Kampot pepper is known as the queen of the pepper world—not only for its exceptional quality but also for its protected origin. Only pepper from Cambodia’s Kampot region may bear this name. There, between fertile soils and a tropical climate, it develops its unique aroma. Its high content of essential oils produces a delicate, lasting heat and complex flavor notes ranging from fruity-sweet to warmly spicy.
Vietnam bean – earthy green notes with a fine touch of acidity. The chocolate shells are cast, then filled, and 12 hours after filling, the pralines are sealed with chocolate. Any fractures are subsequently refined using the Kintsugi method.
