The story of Conflictfood, began in Afghanistan where the founders, Salem and Gernot, met a women’s collective that once cultivated opium. Today, these women harvest the finest saffron independently and free from criminal networks. Inspired by their courage, pars created a praline that celebrates this remarkable spice.Hand-harvested before sunrise, the saffron is among the finest in the world. Two layers: a delicately sweet reduction of saffron and wild honey. The earthy, floral notes of the saffron meet rice and yellow-fruited dark couverture chocolate.

Afghanistan faces immense challenges. Since the Taliban’s takeover in 2021, living conditions for many have deteriorated drastically. Women, in particular, have been affected — denied access to education and many professions, and largely excluded from public life. Poverty and economic hardship are widespread, as numerous international aid organizations have ceased their work in the country. Political instability, corruption, and weak infrastructure further hinder sustainable development. Yet, despite the many adversities, courageous communities continue to fight for their future, preserving centuries-old traditions and seeking ways to remain economically independent.

Saffron from Afghanistan captivates with its intense aroma, radiant color, and exceptional quality. Harvested by hand before sunrise through meticulous labor, it ranks among the finest in the world. Its flavor is warm, slightly sweet, earthy, and floral all at once—no other spice imparts such a vivid color to your dishes.
Saffron is obtained from the blossom of the violet crocus (Crocus sativus). Each flower yields only three delicate stigmas, which are carefully harvested and dried by hand. Its aroma is unique: a warm blend of vanilla, honey, and earthy spice, with a subtle, floral bitterness. Its fragrance evokes blooming meadows, and its taste is rich and multi-layered. Just a few threads are enough to turn dishes a deep, golden yellow.
Thailand beans - Austere, with a balanced balsamic acidity, pure in taste. Holger in't Veld continually searches for the best grown fair trade beans. He creates chocolates with a strong character that we at pars combine with various ingredients.
