Almond nougat
The melted 84% chocolate coating from Holger in't Veld is stirred into the silky rolled almond mass until creamy.The raw almonds come from Sicily directly from the almond farmer, the husband of our winemaker Sonja Gambino. We lightly roast the kernels over a low heat, peel them and then roll them between stone wheels to form a fine puree.
This pure puree is then mixed with Holger In't Veld's chocolate coating and stirred until creamy; the beans come from Colombia.
Shelf life at least 60 days. Store in a cool, dry place, 12 - 17°C.
The hollow bodies of our pralines are cast from the couverture used in order to particularly emphasize the intensity and balance of the aroma.
