Pear & sesame N° 26We roast the sesame from the Bohlsener Mühle over a mild heat and then roll it into a fine paste. This paste is rolled with chocolate to form a sesame nougat.
Two components – one composition. Fruity and pure, the pear, reduced over heat, follows the tart notes of sesame. Fine couverture, a touch of salt – and the quartet is perfect. Lush - refreshing - full-bodied. And vegan
Minimum shelf life 21 days. Store in a cool and dry place, 12 - 17°C.
For the hollow praline bodies, the chocolate must be tempered. We use different beans for the different editions. In the mixed set you can taste the difference.
Uganda Bean - Tart notes, apple, quince. Our beans come from Holger in't Veld and are finely rolled in a small melangeur without adding oxygen to preserve the full aroma.
